If I take my hiv medication around 11 pm, what is the latest I could have a beer or a glass of wine?

Always take your meds at least 3 hours before you drink that give the time to work

I can’t see it being any problem as long as your meds don’t say don’t drink alcohol. I always have a couple of beers/wine at the weekend. If in doubt ask your consultant
